Overview & identification

Hamour, known locally as Gissar (گِسّر) and in English as the Orange-spotted Grouper, is Epinephelus coioides of the family Serranidae, order Perciformes, class Actinopterygii and phylum Chordata. It is a robust, thick-bodied reef fish with brownish-grey colouring and dark blotches along the body, a large head, a wide mouth and firm white flesh. It dwells among coastal waters, rocky seabeds and coral reefs across the Arabian Sea, Persian Gulf and Indo-Pacific, favouring depths between 10 and 100 metres in warm, nutrient-rich water. It is one of the most economically important fish at Karachi Fish Harbour, with strong export demand from the UAE, Saudi Arabia and Qatar. Daily Catch sources it wild-caught using sustainable handline and bottom trawl methods.

Flavor & texture

Hamour offers a mild, slightly sweet taste with a firm yet flaky texture, and white lean meat that manages to be both rich and moist. Its real strength is adaptability: the flavor is clean enough to blend with almost any ingredient rather than dictating the dish, which is why it appears across Arabian, Pakistani and Southeast Asian cooking alike. Chefs typically pair it with aromatic spices, fresh herbs and citrus-based sauces to draw out its natural sweetness. The firmness means it survives grilling, steaming, frying and slow-cooked curries equally well, so the choice of method comes down to the meal rather than the fish.

Sizing, cutting & yield

Whole fish range from 1 kg to 10 kg, and the size matters commercially as well as practically: specimens of 5 kg and above are especially valued by export markets and fine-dining restaurants for their superior meat quality, and they command significantly higher prices. All prices are based on weight before cutting. Approximate yields are 100% whole and uncleaned, 80% whole and gutted, 60% headless and gutted, 55% slices, and 33% boneless. The low-bone structure gives a high meat yield relative to most reef fish and makes preparation and eating straightforward, which is a large part of its premium standing.

Cooking & health benefits

Hamour suits grilling, pan-searing, steaming and curries, and its firm flesh holds up in slow-cooked dishes where softer fish would break down. It is the natural choice for Pakistani-style fish karahi, Arabic grilled Hamour, Gulf-style spiced fish and Asian steamed preparations, and its natural sweetness pairs exceptionally well with butter, garlic, lemon and rich spices. Nutritionally it is rich in Omega-3 fatty acids promoting heart health, brain function and reduced inflammation. It supplies vitamins D and B12 plus calcium, magnesium and selenium for bone strength, immunity and metabolism, and being low in calories with zero carbohydrates it fits keto, diabetic-friendly and weight-loss eating plans.
