Overview & identification

White Pomfret, known locally as Safaid Paplet (سفید پاپلیٹ), is Pampus argenteus of the family Stromateidae, class Actinopterygii and phylum Chordata. A naming note worth knowing: while it is universally called White Pomfret in Pakistan and across South Asia, the correct FAO name for the species is Silver Pomfret — both names refer to this same fish. It has an oval, disc-shaped body with a silvery-white sheen, firm succulent flesh and very few bones, and it gives off a clean, non-fishy aroma. It thrives in the warm coastal waters of the Arabian Sea over sandy and muddy seabeds at moderate depths, and is found across Pakistan, India and the wider Indo-Pacific. We source it by gillnet and handline.

Flavor & texture

White Pomfret is celebrated for a mild, buttery taste with a hint of oceanic sweetness, carried by fine, flaky flesh. It is one of the most forgiving fish in the kitchen because it adapts to grilling, frying, steaming and baking without any one method letting it down. The flesh absorbs seasoning readily while keeping its own delicate character, so it never disappears under a marinade and never overpowers a light preparation either. That balance explains why it is such a fixture in South Asian, Middle Eastern and wider Asian cooking, and why it is the fish most often chosen for family meals where not everyone wants something strongly flavoured.

Sizing, cutting & yield

White Pomfret is sold in two size grades, priced differently: medium at 130–170 g per fish and large at 200–250 g per fish. The minimum order is 2 kg and all prices are based on weight before cutting. Four options are available: whole and uncleaned, whole and gutted, headless and gutted, and slices. Approximate yields are 100% whole and uncleaned, 75% whole and gutted, and 70% for both headless-and-gutted and slices. For most customers we recommend the headless and gutted cut — it saves the most kitchen work while still presenting well for family meals and occasions, and at these fish sizes the yield difference against whole-and-gutted is small.

Cooking & health benefits

This fish shines across a wide range of dishes: crispy deep-fried pomfret, masala tandoori, Cantonese-style steaming, or oven-roasted with garlic butter, all giving a soft, melt-in-the-mouth result. Pair it with basmati rice, grilled vegetables or a tangy chutney. On nutrition it is especially well suited to everyday Pakistani eating. It is rich in Omega-3 fatty acids that help lower cholesterol and support heart health, a growing concern for adults here, and it delivers lean, high-quality protein for muscle strength and steady energy. It also supplies vitamins that support brain function and memory, stays low in cholesterol, and carries minerals that aid metabolism and immunity.
