Introduction

Indo-Pacific Sailfish, locally known as Ghora (گھوڑا), is a fast-swimming pelagic predator and a popular large fish landed at Karachi Fish Harbour. Scientifically named Istiophorus platypterus, this species is valued in Pakistan for its firm, boneless-friendly white meat, making it a favorite among caterers, commercial fry joints, and event kitchens. Though it resembles Swordfish and Black Marlin in appearance and usage, Sailfish stands out for its softer texture and neutral flavor, often served as boneless fillet or fried chunks.

At Wholesome Seafood, we deliver fresh-cut Sailfish meat, cleaned and prepared for home chefs and commercial users alike.

Flavor Profile

Indo-Pacific Sailfish (Ghora) has a mild-tasting white meat with a slightly softer texture than Swordfish. It absorbs spices and marinades well, making it ideal for desi-style fry recipes, fillet platters, or grilled steaks.

Taxonomy & Identification

English Name: Indo-Pacific Sailfish
Local Name (Urdu): Ghora (گھوڑا)
Scientific Name: Istiophorus platypterus
Family: Istiophoridae
Order: Perciformes
Class: Actinopterygii

Habitat

Found in the tropical offshore waters of the Arabian Sea, the Indo-Pacific Sailfish is a deep-sea migratory species often caught off the Balochistan coastline. It is landed in Pakistan during deep-sea fishing operations and transported chilled to Karachi Fish Harbour.

Catching Method

Indo-Pacific Sailfish (Ghora) is caught through longline and deep-sea trawling methods, often along with other large game fish like Swordfish and Black Marlin. Caught fish are quickly iced and handled professionally to preserve meat quality.

Physical Attributes

Its appearance is striking, with a long body and a large dorsal fin resembling a sail. Compared to the Black Marlin of the Arabian Sea, the sailfish is more slender. Its massive, flexible dorsal fin is the key differentiator from the marlin’s smaller, more rigid one. A marlin’s pectoral fins are also fixed, unlike a sailfish’s.

Size

We offer Indo-Pacific Sailfish (Ghora) in large cuts, typically from fish weighing 20 kg to 80 kg. It is available as bone-in steaks, thick slices, or boneless fillets, ideal for both domestic and commercial usage.

Cleaning Preference

Best prepared as boneless fillets or steak slices, Sailfish offers a moderate fillet yield with very few bones, making it easy to prepare for bulk frying and grilling.

Health Benefits

The Indo-Pacific Sailfish is a powerhouse of nutrition. It offers lean protein, vital for muscle growth, and is rich in omega-3 fatty acids, which support heart and brain health. This impressive fish also provides essential vitamins and minerals, including selenium and Vitamin D, boosting overall wellness.

However, as a large predatory fish, sailfish can accumulate mercury. While enjoying it is fine, moderation is key. To make informed choices about your seafood consumption and understand potential mercury risks, it is best to consult with health authorities. For comprehensive guidance, you can read the U.S. Food and Drug Administration’s advice at FDA.gov.
