Overview & identification

Pickhandle Barracuda, known locally as Safaid Kund (سفید کند), is Sphyraena jello of the family Sphyraenidae, order Istiophoriformes, class Actinopterygii and phylum Chordata. It has a long silver body marked with distinct vertical bars along the sides, and thick white flesh with very low bone content. It is worth distinguishing from its close relative the Sawtooth Barracuda (Kala Kund): Safaid Kund has visibly cleaner white flesh and a milder flavor. A fast swimmer and top predator, it thrives in the tropical marine waters of the Arabian Sea around coral reefs and rocky shores, and is usually taken from deeper, cleaner water. Daily Catch sources it by handline and gillnet, which minimises bruising and damage to the fish.

Flavor & texture

Safaid Kund has firm, white, flaky flesh with a mild, clean flavor and a slightly sweet undertone. It is one of the least fishy-tasting options in the range, which makes it a natural pick for anyone who finds stronger seafood off-putting. The flesh absorbs marinades and spices exceptionally well, so it rewards a proper masala rather than needing one, and it stays firm through cooking rather than flaking apart in the pan. That combination of a light base flavor and a sturdy texture is why it handles frying, grilling and curries with equal success.

Sizing, cutting & yield

Fish range from 2 kg to 6 kg each, and you can request whole, sliced or boneless cuts depending on what your kitchen needs. All prices are based on weight before cutting. Approximate yields are 100% whole and uncleaned, 85% whole and gutted, 70% for both headless-and-gutted and slices, and 45% boneless. The 45% boneless yield is strong for a fish this size and reflects the genuinely low bone content — the thick white flesh slices easily and needs very little preparation once it reaches you, which is part of why it is popular with chefs.

Cooking & health benefits

Safaid Kund is versatile in the kitchen and at its best fried with desi masalas, grilled with lemon and herbs, or cooked karahi-style. Because the white flesh stays firm under heat, it is well suited to Pakistani BBQ, tandoori and dry-fry recipes where a softer fish would break up. Nutritionally it is a good source of lean protein, Omega-3 fatty acids, phosphorus and vitamin D. The low-fat white meat supports heart health, muscle recovery and weight management, and naturally low mercury levels make it a sound family choice, including for children and older family members wanting something lighter.
